Researchers at the Athlone Institute of Technology's Bioscience Research Institute in Ireland found that enzyme-modified coconut oil strongly inhibits the growth of most strains of Streptococcus bacteria, including Streptococcus mutans, an acid-producing bacterium that is a major cause of tooth decay.

Weston A. Price was an American dentist in the first part of the 20th century who traveled all over the world examining groups of isolated people, taking note of their dental and physical health, analyzing their diets, and doing followup research on nutrition. He came to the conclusion that the nutrient-dense diets of these people contained vital clues for dental and physical health, and reported his findings in the book Nutrition and Physical Degeneration.
According to the insights of Dr. Edward Mellanby, Dr. Weston Price and Dr. Ramiel Nagel, there are four main things that contribute to tooth decay: lack of minerals in the diet (calcium deficiency, magnesium deficiency and phosphorus deficiency); lack of fat soluble vitamins (A, D, E and K, especially vitamin D deficiency); too much consumption of phytic acid-rich foods; and too much consumption of processed sugar.
